What I love most about knitting - besides being able to create practical garments by hand - is that with every single project, my skills increase and I learn something new.  Learning how to knit initially is certainly a milestone, but the learning doesn't just stop after you master how to cast on, knit and purl.  The more you knit, the more you learn; and the more you learn, the more projects you'll want to make.  With this ongoing process of absorbing knitting tips and techniques daily, it's no wonder why so many knitters have dozens of new projects lined up and even more started or nearly completed.
